Golden Thyme Potatoes

Ingredients for 1 serving:

  • 155 grams of petite gold potatoes
  • 1.3 grams of avocado oil
  • 1.5 grams of garlic clove
  • 2.5 grams of shallots
  • 0.2 grams of fresh thyme
  • 2.8 grams of salt
  • 0.3 grams of black pepper
  • 13.3 grams of unsalted butter

Instructions:

  1. Wash the petite gold potatoes thoroughly and slice them into ¼-inch rounds.

  2. Place the sliced potatoes in a large microwave-safe bowl. Place a small bowl of water in the microwave alongside it to create steam. Cook on high for 5–8 minutes, or until the potatoes are fork-tender.

  3. While the potatoes cook, finely chop the garlic, shallots, and fresh thyme.

  4. In a large skillet, heat the avocado oil over medium heat. Add the shallots and cook until translucent, about 2–3 minutes. Stir in the garlic and cook for another 30 seconds, being careful not to let it burn.

  5. Add the cooked potatoes to the skillet along with the thyme, butter, salt, and black pepper. Stir gently until everything is warmed through and evenly coated with butter and seasonings.

  6. Transfer to a serving dish and enjoy warm.
