Chicken Empanadas
Ingredients for 1 serving (6 empanadas):
Tortilla Dough:
- 98 grams of masa flour
- 0.6 grams of salt
- 140 grams of water
Chicken Filling:
- 120 grams of chicken breast
- 0.8 grams of salt
- 0.15 grams of black pepper
- 0.9 grams of Hatch red chili powder
- 0.4 grams of Hatch green chili powder
- 3.7 grams of garlic cloves
- 15 grams of white onion
- 50 grams of asadero cheese
Salsa:
- 79 grams of Roma tomatoes
- 4.8 grams of garlic cloves
- 27.9 grams of white onion
- 0.55 grams of dried chili de arbol
- 50 grams of water
- 0.7 grams of salt
For Frying:
- Avocado oil (as needed)
Instructions:
Begin by trimming the chicken breasts. Fill a large pot with water and add the trimmed chicken breasts. Bring the water to a boil with the chicken in it. Allow the chicken to cook for about 35 minutes once the water starts boiling. After cooking, drain the water and use a mixer to shred the chicken into fine pieces.
In a blender, combine the jalapeΓ±os and all subsequent ingredients up to and including the water to create the marinade.
You might not need all of the marinade. It depends on the desired spice level & size of the chicken breasts.
Finely chop the onions, tomatoes, and any extra cilantro. Place each in separate serving bowls for later use as taco toppings.
Prepare and arrange all other taco toppings (excluding avocado) in separate serving bowls. This could include items like finely diced white onions, diced tomatoes, shredded lettuce, cheese, sour cream, black beans, refried beans, canned corn, limes, or taco sauce.
Begin cooking the tortillas. Depending on your needs and timing, you may continue to cook them intermittently throughout the next steps.
Once the chicken is fully boiled and shredded, combine it with the prepared marinade, ensuring the chicken is well-coated and flavorful.
When you're close to serving, slice the avocado. This step is done later to prevent the avocado from browning.
Serve the meal by letting everyone build their own tacos using the shredded marinated chicken, fresh toppings, and warm tortillas.
